Three addresses cover most of the island between them: Le Fournil, Pains et Moulins and Boulangerie Maurice, each with a different approach and a different part of the map.
Le Fournil, the multi-site standard
Le Fournil is a family-run bakery-patisserie with four outlets covering a good stretch of the coast: Pointe aux Canonniers, Grand Baie (Domaine Victoria), Haute Rive and Rivière Noire (La Mivoie). The brand builds its bread, pastries, cakes, sandwiches and chocolates on French baking tradition, with artisanal production at each site rather than one central factory. For anyone based in the North or the West, it’s the easy option — there’s almost always an outlet within twenty minutes.
Pains et Moulins, artisan bread at scale
Pains et Moulins opened more than ten years ago in Grand Baie, then relocated in June 2021 to Richmond Hill, next to the Grand Baie Super U. The brand now runs five outlets, including two inside shopping centres, at Bagatelle Mall and So’flo — convenient for combining a grocery run with fresh bread. It was founded by a French doctor who has lived in Mauritius for twenty-five years, joined nine months later by his son, trained in hospitality at Four Seasons. Production relies on four French bakers who train the local teams and eight Mauritian pastry chefs, with work starting at midnight so the bread is fresh from opening time.
Boulangerie Maurice, natural leaven the old way
At the opposite end from the multi-site model, Baptiste’s Boulangerie Maurice, on Rue Grand Nazareth in the Salines area, works entirely by hand: kneading in a wooden trough, natural leaven, heritage wheat flour milled from pre-1945 varieties, and Guérande salt. Baptiste trained with peasant bakers in the Lot region of France before bringing the method to Mauritius. It’s the address for a long-fermented sourdough loaf, away from standardised white flour — at the cost of a single location, in the island’s south-west.
Which one depends on where you live
North (Grand Baie, Pereybère, Trou aux Biches): both Le Fournil and Pains et Moulins are within reach, with the practical edge going to Pains et Moulins for its mall locations.
West (Tamarin, Rivière Noire, Flic en Flac): Le Fournil’s La Mivoie outlet in Rivière Noire remains the best option for daily bread without a long drive.
South or South-West: Boulangerie Maurice in Salines is the closest address for genuine sourdough, even if it means planning the trip.
The price, against the cost of living
French-style artisan bread costs more than a supermarket baguette in Mauritius, partly because several of these bakeries import their flour from Europe to keep the product authentic.
